Since Hari Raya is coming, i baked some cookies for the upcoming occassion. A very simple recipe which was taught by my mother.

1) CHOCOLATE TART COOKIES
(Yield: 60-70 pieces)
Ingredients:
All purpose flour - 250g
Butter - 125g
Cornflour - 25g
Milk powder - 25g
Icing sugar - 50g
Toppings:
Chocolate
Coloured chocolate rice

Method:

1) Mix flour, cornflour and milk powder together in a mixing bowl.
2) Cream the butter and icing sugar together.
3) Add the mixed dry ingredients into the butter and sugar bit by bit. Using clean fingers, mix the mixture thoroughly to form a dough as shown in the picture above.
4) Roll out the dough using a rolling pin until a suitable thickness.
5) Tap the cookie mould with flour to prevent the dough from sticking onto it. Cut out the dough using the cookie mould from the rolled dough.
6) After filling up the tray with the cookies, bake it at 170 degree celcius for 20 minutes.
7) While waiting to bake the cookies, melt the chocolate bar using a double boiler.
8) After the cookies are baked, fill the centre of the cookies with a teaspoon of chocolate liquid.
9) Sprinkle some coloured chocolate rice on the chocolate.
10) Refrigerate the cookies for at least 10 minutes to solidify the chocolate back.

To melt the chocolate, double boiler is usually used. However, we can also use microwave to melt the chocolate. Below are some tips to consider when melting a solid chocolate.

Making a handbag from recycled jeans

I found an very simple way of making a tote bag from a recycled jeans which i can use as part of the product line in the Textiles & Clothing group assignment.



Now why didn't i think of that?! :(

Lemon Meringue Pie

3) LEMON MERINGUE PIE
(Yield: 1 Pie)


Ingredients for Pie Crust:
Butter, cold and solid - 250g
Egg - 1
Sugar - 100g
Flour - 500g

Method for Pie Crust:

1) Sieve the flour.

2) Add sugar into the sieved flour.

3) Cut the butter into smaller cubes and add them into the mixture.

4) Using Rubbing-In method, mix the solid butter with flour till the mixture resembles bread crumbs.


5) Roll out the dough using a rolling pin to match the shape of the baking tin.


6) Use a satay stick to prick the dough and bake it for 20 minutes at 210 degree celcius.
Ingredients for Lemon curd:
Granulated sugar - 300g
Cornstarch - 45g
Salt - 1 pinch
Water, cold - 360ml
Egg yolks - 5
Lemon juice, fresh - 120ml
Lemon zest, grated - 10g
Unsalted butter - 30g

Method for Lemon Curd:

1) Combine sugar, cornstarch, salt and water in a heavy saucepan.

2) Cook over medium-high heat, stirring constantly, until the mixture becomes thick and almost clear as seen in the above picture.
3) Remove from heat and slowly whisk in the egg yolks. Stir until completely blended.

4) Return to the heat and cook, stirring constantly, until thick and smooth.

5) Stir in the lemon juice and zest. When the liquid is completely incorporated, remove the filling from the heat.

6) Add the butter and stir until melted.

7) Set the filling aside to cool briefly. Fill the pie shells with the lemon filling.

Ingredients for Meringue:
Egg whites - 120g
Sugar - 120g

Method for Meringue:

1) Whip the egg whites until soft peaks form.

2) Slowly add sugar while whisking constantly. The meringue should be stiff and glossy, not dry and spongy-looking.

3) Mound the meringue over the filling, creating decorative patterns with a spatula. Be sure to spread the meringue to the edge of the crust so that all of the filling is covered.

Tote bag & towel~!

Measuring, cutting, designing, decorating, sewing, attaching the handles..And finally..it's done~! Yeah..finally finish making our tote bags~! And now it's ready to be put up for bids~! The bag is reversible and you can flip it around too. So there's a total of four different designs to choose from to be the front of the bag..

Oh..not to forget our towel with embroidery on it~! Yip..You see the word "Princess" and that's my towel. But it's up for bid too if you like it~! =^_^= Okie..everything I made is available for purchase. Yes, I do see some sparkling eyes (P/S: Only for those who like my handicrafts. If you don't like it, just ignore what I say)

Haha..today is a happy day because a lecturer from another module thought that my 'Princess-themed' product line was wonderful and she couldn't believe that I actually made it. I just love the expression she had on her face. She thought I specialized in this area in University (Hmm..is there such a degree in S'pore anyway?) But hey..I really feel appreciated for my handicrafts..Thanks..it really means a lot to me..=^_^=

Microteaching - meat group~!

Wonderful~! It's time to cook up a storm again~! I feel like a carnivore after cooking all the different meat dishes. I love the beef kebabs~! (Okie..Ms Chin..The $80+ per kg of beef was worth it) Hmm..maybe it could be better with more seasoning. But a healthier choice is always the way to go =^_^=

I always feel that the food should be eaten piping hot. When it cools down to like 18 degrees celcius, it does not do any justice to the food. Really. Another Sad thing was that there was no dessert this time round~! Boohoo..I love desserts..

But oh~! The table setting was wonderful~! Makes me feel like on a pirate ship. They should all dress up as pirates hahah.. And it was an eye opener to know of a 'beer' containing no alcohol at all..hahah..Interesting..Photos for viewing below~!

Microteaching - seafood group~!

Under the sea..under the sea..

Once upon a time, there was a crab, which was tied up and brought to our food lab. It tried to struggle as the chopstick poked through it...Before you know it, it stopped moving and lay restless..ouch..rest in peace poor crab..But okie..let's move on..

For today, the most delicious dish goes to...the seafood quiche~! yum yum..love it.. The fruit trifle would have been nicer if it was in the fridge..but still..desserts are always nice..

Otah was filled with the smell of lemongrass (My favourite aromatherapy essence) and rejuvenated my senses. Clam chowder was fine but I think mine wasn't that thick and creamy enough.

So..here I present the delicious food to tempt your tastebuds~!

Product line for textile..

Bunny~? Halloween~? Or Christmas~? What theme should we have for our product line~?? *Headache

I know~! Since I am Princess Fiona, we shall make it princess-themed~! Muahaha..sorry Kai Xuan

So..And the long journey of making the products goes..

Cracking my brain for ideas..Looking for recycled materials..Designing the products..Sewing..*pricks my hand*..Unpicked some stitches..and so on..

I don't know if Dr Mok is going to say anything not so nice about them but here there are~! And you can be the judge~! Hahah..But I love them..Maybe we will add more products in this range..=^_^=
